If you are like me, you may get tired of cooking breakfast, well really just tired of cooking! I have tried to create a few days of food prep and making easy grab and go items for the kids. These cookies have been a hit because they taste like peanut butter chocolate chip cookies but have so many healthy ingredients!

Ingredients

  • 1 Cup Instant Oats
  • 3/4 Cup Gluten-Free Flour or AP
  • 1 1/2 tsp Baking Powder
  • 3/4 tsp Ground Cinnamon
  • 1/8 tsp Salt
  • 1 scoop of unflavored vital proteins
  • 1 Egg White
  • 1 tsp vanilla
  • 1/4 Cup of Peanut Butter
  • 1/4 Cup Maple Syrup
  • 1/4 Cup unsweetened vanilla almond milk
  • 3 tbsp of mini chocolate chips
  1. Preheat oven to 325 degrees and line cookie sheet with parchment paper.
  2. In a medium bowl mix oats, flour, baking powder, cinnamon, salt and vital proteins.
  3. In a separate bowl mix egg white and vanilla. Stir in peanut butter. Add maple syrup and milk until smooth.
  4. Add in flour mixture and mix until blended.
  5. Fold in chocolate chips.
  6. Drop onto cookie sheet.
  7. Bake at 325 degrees for 10 minutes.
  8. Allow cookies to cool and Enjoy!
