If you love potato soup, then this slow cooker recipe is so easy to make. Just toss some potatoes in the slow cooker and walk away. You can also make this dairy free if you prefer or sub vegetable broth instead of chicken broth. This is also one of those recipes that because every potato is different, you kind of have to use your own judgment with the consistency of how much liquid. Last time I even had to add a little more broth after it had cooked. Overall it’s hard to mess up, so enjoy!

Easy Slow Cooker Potato Soup

- Slow Cooker
Ingredients
- 6-8 Potatoes, peeled and cut
- 4 Cups Chicken Broth
- 1 Yellow Onion
- 1 Tbsp Dried Parsley
- 3 Garlic Cloves, Diced
- Dash Salt & Pepper
- 3 Tbsp Butter
- 1 1/2 Cup Heavy Cream
Toppings
- Sour Cream
- Cooked Bacon
- Shredded Cheese
Instructions
- Peel and cut potatoes, onion, and garlic.
- Add potatoes, onion, garlic, parsley, salt, pepper, and chicken broth to slow cooker
- Cook on low 4-6 hours or high 2-3 hours
- Once potatoes are soft, use immersion blender, mixer, or potato masher to blend.
- Mix in heavy cream and butter
- Top with sour cream, cheese and bacon
