Easy Cheeseburger Soup
A creamy and hearty cheeseburger soup made with ground beef, potatoes, and cheddar cheese. It tastes just like a cheeseburger in a warm bowl and is perfect for family dinners.

- 1 lb ground beef
- ½ onion chopped
- ½ cup shredded carrots
- ½ cup chopped celery
- 2 cloves garlic minced
- 1 tsp salt
- 1 tsp dried parsley
- ½ tsp ground mustard
- ¼ tsp black pepper
- 4 cups beef broth
- 3 medium potatoes peeled & cubed
- 1 cup half-and-half
- 3 tbsp cornstarch
- 1 cup shredded cheddar cheese
In a large pot, cook ground beef with chopped onion until browned. Drain extra oil.
Add carrots and celery. Cook for 3–5 minutes until slightly soft.
Add garlic, salt, parsley, mustard, and pepper. Cook for 1 minute.
Pour in beef broth and add potatoes. Cook for about 15 minutes until potatoes are soft.
In a bowl, mix half-and-half and cornstarch. Add to the soup.
Add shredded cheddar cheese and stir well.
Cook on low heat for a few minutes until thick and creamy.
