Easy Cheeseburger Soup

A creamy and hearty cheeseburger soup made with ground beef, potatoes, and cheddar cheese. It tastes just like a cheeseburger in a warm bowl and is perfect for family dinners.

Ingredients
  

  • 1 lb ground beef
  • ½ onion chopped
  • ½ cup shredded carrots
  • ½ cup chopped celery
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1 tsp dried parsley
  • ½ tsp ground mustard
  • ¼ tsp black pepper
  • 4 cups beef broth
  • 3 medium potatoes peeled & cubed
  • 1 cup half-and-half
  • 3 tbsp cornstarch
  • 1 cup shredded cheddar cheese

Instructions
 

  • In a large pot, cook ground beef with chopped onion until browned. Drain extra oil.
  • Add carrots and celery. Cook for 3–5 minutes until slightly soft.
  • Add garlic, salt, parsley, mustard, and pepper. Cook for 1 minute.
  • Pour in beef broth and add potatoes. Cook for about 15 minutes until potatoes are soft.
  • In a bowl, mix half-and-half and cornstarch. Add to the soup.
  • Add shredded cheddar cheese and stir well.
  • Cook on low heat for a few minutes until thick and creamy.
