If you are like me, you may get tired of cooking breakfast, well really just tired of cooking! I have tried to create a few days of food prep and making easy grab and go items for the kids. These cookies have been a hit because they taste like peanut butter chocolate chip cookies but have so many healthy ingredients!
Ingredients
- 1 Cup Instant Oats
- 3/4 Cup Gluten-Free Flour or AP
- 1 1/2 tsp Baking Powder
- 3/4 tsp Ground Cinnamon
- 1/8 tsp Salt
- 1 scoop of unflavored vital proteins
- 1 Egg White
- 1 tsp vanilla
- 1/4 Cup of Peanut Butter
- 1/4 Cup Maple Syrup
- 1/4 Cup unsweetened vanilla almond milk
- 3 tbsp of mini chocolate chips
- Preheat oven to 325 degrees and line cookie sheet with parchment paper.
- In a medium bowl mix oats, flour, baking powder, cinnamon, salt and vital proteins.
- In a separate bowl mix egg white and vanilla. Stir in peanut butter. Add maple syrup and milk until smooth.
- Add in flour mixture and mix until blended.
- Fold in chocolate chips.
- Drop onto cookie sheet.
- Bake at 325 degrees for 10 minutes.
- Allow cookies to cool and Enjoy!
