This is a great and easy salad to make for your next holiday party or girls get together. It’s a great cozy salad for fall and winter, but you can really enjoy this year round. The pomegranates give it so much flavor and blends well with the brussel sprouts.

You can even make it ahead and just toss the dressing on when you are ready to serve.

Brussel Sprout Pomegranate Salad

This delicious salad is great for the holidays or anytime during the year! The pomegranates give it great color and flavor.

  • 4 cups shaved brussel sprouts use either already shaved or food processor
  • 5 slices cooked bacon
  • 1 cup parmesan
  • 1 cup pomegranats drained
  • 1 cup apple diced
  • 1 cup pecans diced


  • 1/3 Cup Extra Virgin Olive Oil
  • 2 Tbsp Apple Cider Vinegar
  • 1 tsp Garlic
  • 1 Tbsp Fig Butter or fig jam
  • 1/2 lemon
  • dash salt & pepper
  • dash crushed red pepper
  • 1 tsp thyme


  • In a large bow add the brussel sprouts, cooked bacon, parmesan, pomegranates, pecans, and apples.
  • Mix together dressing ingredients
  • Pour dressing over brussel sprout mix when ready to serve. Mix well.
