Chicken lettuce wraps are a great summer dish. We love getting these from PF Changs so this is a great option at home and healthy! If you have picky kids who don’t want lettuce, you can always serve over rice or rice noodles.

2 Tbsp Sesame Oil

1 lb Shittake Mushrooms

1 lb Ground Chicken

1 small yellow onion, diced

4 garlic cloves minced

1 tbsp ginger (fresh or dry)

2 Tbsp Soy Sauce

1 tsp Sriracha

1 can water chestnuts, finely chopped

1/2 cup matchstick carrots

Optional Green Onions

Boston leaf lettuce

  1. Heat pan with sesame oil. Add in mushrooms, cook 4-5 minutes.
  2. Add in ground chicken and onion, cook until brown.
  3. Add ginger and garlic until fragrant, then add soy sauce, sriracha, water chestnuts, and carrots. Cook for another 3-4 minutes to soften carrots.
  4. Top with green onion and serve in leaf lettuce.
