It’s finally summer, but our kids still have to eat! In fact I feel like I cook more in the summer. Someone is always hungry, and I have pandemic flashback nightmares of cooking all the time!

Here are few quick and easy meals to make ahead or even make extra to reheat the next day and keep everyone happy!

  1. Chicken Enchiladas

This is my mom’s recipe that I had growing up and today it’s one of my kids favorites that they always look forward to having. This is also great to make ahead!

2. Instant Pot Butter Chicken

We make this on repeat at our house. Surprisingly my kids love it and it’s healthy!

3. Chicken Pot Pie (GF)

We love this chicken pot pie! It’s so good and can also be made gluten free!

4. Crock Pot Hamburger Steak

This is one of my favorite childhood recipes that my grandmother would make. This is also great to make on Sunday’s after church.

5. Slow Cooker Chicken & Potatoes

Slow cooker chicken and potatoes is one of my families favorites. It’s so easy to make and healthy. I usually use the Noble Made parmesan sauce, which surprisingly my family prefers but you can also use the Buffalo Wild Wings brand of parmesan.

Slow Cooker Parmesan Chicken & Potatoes

This is such an easy, healthy meal to make on busy weeknights! You can easily add a salad or green beans on the side to make a complete meal.

  • Slow Cooker

Ingredients
  

  • 3 Chicken Breast Cubed
  • 2 cups cut potatoes
  • 1 tbsp garlic
  • 1 tbsp italian seasoning
  • 1 tbsp Kinders salt, pepper, & garlic
  • 1 bottle Noble Made Parmesan Wing Sauce

Instructions
 

  • Add all ingredients to slow cooker.
  • Cook on Low for 4-6 hours or High for 2-3 hours.

Notes

You can also use the Buffalo Wild Wings brand of Parmesan Sauce, but I prefer Noble Made.
