Lazy Lasagna (The Easiest Cozy Dinner for Busy Nights)

If you love lasagna but don’t love the time, dishes, and effort that usually come with it… this one’s for you.

This lazy lasagna is everything you want—rich, cheesy, comforting—but made the easy way. No boiling noodles, no complicated layering, and minimal prep. It’s one of those recipes I keep coming back to on busy weeknights when I need something that feels homemade but doesn’t take all evening.

Honestly, this is the kind of dinner that saves you when everyone’s hungry, you’re tired, and takeout is calling your name.

Lazy Lasagna

This is such an easy family meal for busy weeknights. The best part, is that it's high in protein and even gluten free!

Cook Time 45 minutes

Ingredients
  

  • 1 lb ground beef
  • 1 24 oz marinara
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1 box lasagna noodles
  • 2 cups mozzarella, divided
  • 1 1/2 cup water
  • 1 cup cottage cheese or ricotta I blend my cottage cheese

Instructions
 

  • Preheat oven to 375
  • Cook your ground beef, drain off excess grease
  • Add Italian seasoning and garlic once cooked
  • Grease a 10x 14 casserole dish
  • Pour in jar of marinara
  • Add water and mix
  • Mix in cottage cheese or ricotta and 1 cup mozzarella. If using cottage cheese, I blend mine because of texture and picky kids.
  • Add in ground beef
  • After mixing add in broken lasagna noodles. Make sure they are fully covered with liquid.
  • Add the remaining mozzarella cheese to cover the top
  • Cover with foil and bake for 45 minutes or until noodles are soft.
